Summer squash recipes?

I have summer squash coming out of my ears at the moment. I need more ways to cook them. I've done squash fritters, squash pickles, battered and fried squash, steamed squash...you get the idea. Does anyone have any great recipes they're willing to share?

Yum Yum Yum Yum Yum! Olive oil in a black skillet, squash sliced into circles, not too thick, a bit of oregano , fried until browned. AHHHH Can't wait!

Roasted and put in a lasagna with other veggies. Found recipe at Better Homes and Gardens June or July issue last year. Used the no cook lasagna noodles. Roasting them in olive oil is the key.

We love to slice them lengthwise and throw then on the bbq grill. I brush a little soy sauce on them, then pepper and garlic powder. They are delicious!

ZUCCHINI BREAD

You can use summer squash of course.

Nope, don't know the recipe, but it's similar to banana bread. In case you don't know the recipe, half the gals and some of the guys here will know a recipe for it.

I LOVE ZUCCHINI BREAD.

Quite right, Marshall! Zucchini bread is amazing! There are some wonderful recipes for it on allrecipes.com. You can even store grated zucchini in the freezer to make zucchini bread during the winter months.

My sister used to make zucchini bread with lots of poppy seeds in it, in a cake mold, and she put some kind of mostly powdered sugar all over it when it was still hot, and yes, sometimes with bananas in it too. *slurp

I've used zucchini or summer squash... delish!

Chocolate Zucchini Cake

1 stick margarine
1/2 cups oil
1 1/3 cups sugar
2 eggs
1 tsp vanilla
1/2 cup buttermilk
2 1/2 cups flour
4 tbsp cocoa
1 tsp baking soda
1/2 tsp cinnamon
2 cups grated zucchini

Topping
1/2 cup choc. chips
1/2 cup nuts *I use walnuts*

cream 1st four ingredients together **beat WELL** Add Vanilla and buttermilk, blend well. Sift dry ingredients and add to creamy mixture *i just add the cocoa, soda and cinnamon 1st mixing well then add flour slowly* STIR in grated zucchini.

Before baking spread choc. chips and nuts on top of cake.

bake @ 325 for 45min in 9 X 13 pan
