I have been doing a lot of dragon wheels (roasted foil packets of meat and vegetables) lately ..they are easy and you can make them on the grill when the house is hot

everyone gets what they want in their package


we smoke our own bacon and make our own sausage...I will take a piece of that or some other fatty meat ..or no meat and just use olive oil

and wrap up garden vegetables and a mix of herbs and spices..salt and pepper.. in a secure foil packet..toss in the oven or on the grill ..rotate often and eat out of the packet!
no dishes!


you can literally put any mix of anything in the foil packets ..do curry, Asian, Mexican or Italian....whatever seasonings you like ..you can even make a foil packet gumbo with okra and tomatoes sausage and a bit of chicken ...

chicken, sausage, pork..beef ...lamb ...fish ...shellfish ..mushrooms...beets...name it you can make it in a package! ..I did a scallop and spinach one with lemon and butter with a fig leaf that was to die for

just remember seafood and fish just take a few min so you have to combine with a rapid cooking vegetable (seems obvious but I tried shrimp and carrots one time and well they do not cook at the same rate obvious to anyone but me at the time!)

yup Dragon wheels are our favorite summertime food! no mess ..endless variations as your garden produces

PS for breakfast today my husband is makeing me some salmon and fresh string beans :)

one of my patients brought me some he caught this week and I can not wait for dinner!!!!

Salmon!! :drool I never liked salmon until I moved to the Pasific NorthWest!! We had some cold King Salmon (smoked) for dinner on Sunday night, that is my favorite way to eat it!!! I roasted some beets, sauteed the stems in butter with a bit of bacon. OMG, that is the best meal I've had in quite a while.

I have lots of lettuce now and snap peas and just peas that we are eating. No nice recipe from me, salad and raw peas thats it. I'm not that creative.

I've got nice big carrots and I'm wondering what to do with them, any suggestions?

Oh, today for lunch, I made Itallian Wedding soup with some of my own baby spinach, my own garlic and rosemary and fresh chicken eggs from the girls. I started with a homemade long-simmered chicken broth (recipe for the broth and the soup I got from this sister forum sufficientself.com) it was to die for!!!! That is going to be for dinner too along with a salad filled with carrots, fresh peas and snap peas. Maybe a hunk of the sourdough rye bread I got from the farmer's market too.

I made some lovely ground turkey stuffed squash in a minced squash and tomatoe sauce mixed with butter, heavy cream and lots of basil!!!

Mmmmmm.... my husband has never even liked squash a little bit until tonight. He said it was the BEST!!!!

I just made zucchini and blueberry bread...yum....

Zucchini from the garden, the blueberries from Meijer (they came from Michigan so not too much of a drive :hu )

HiDelight, I love your dragonwheels.

We had minestrone last night. Everything was from the garden, some of it frozen from last year. But it feels sooo great to have a meal totaly home grown, except the oil, cheese, salt and pepper.

Tonight we're having steamed baby zucchini with burgers and homemade fries.

son in law gathered tomatoes, hot peppers, etc from the garden and made his famous(among friends and family) salsa. yummmmit does have a "bite" to it ::drool
