My, my this thread has gotten long! :ep Nothing spectacular, but I canned about 6 quarts of green beans last night. Had green, purple and wax bush beans, freshly picked from my garden. I've picked two zucchini's, need to go buy sugar and then I'll make bread with them. :drool

Out of my MIL's garden I made a wonder squash casserole. It had zucchini, yellow squash and tomatoes. Melt some butter and add whatever spices you like (coat the squash) and bake it for 30 minutes. Put some cheese on top and bake another 30 minutes. It was delicious.

We stuck a zucchini into my special Seafood Alfredo sauce tonight and boy, was that ever good! I think it's going to be a regular thing from now on, LOL.

I just sliced it, cut the slices in half, steamed them using the juice from the shrimp (all I did was put a clear lid over most of the skillet), then added the sauce and crab etc and cooked as usual.


Yummy.

Teresa cut a large bowl of okra today and fixed a portion of it for dinner tonight. Sliced about 1/2 inch thick, rolled in corn meal, flour, salt, and pepper then lightly fried in grapeseed oil. Most excellent!!! Served with sliced tomatoes and peas from the garden and cornbread. Life don't get no better, believe you me...

Oh its been a fine day of eating garden grub!!! Mmmm

We made pickles, we are making salsa now, we made pear jam, we've made a salad with lunch, and cukes and tomatoes with dinner. We had grilled some corn for a snack, and used 1/2 in the salsa.... we added peas from the spring in the rice with dinner and chopped some onions and hot peppers to carmalize and pour over the chicken I grilled for dinner.

We also had scrambled eggs for breakfast mixed with basil, chives and parsely from the garden!!! Side of fresh figs, and toast with blueberry jam I made!!!

OMG... I am so full just looking at what I ate today!!!!!!

Well, today I canned 24 oz of various peppers (Anaheim, jalapeno and sweet banana) in 3 8oz jars, and also 2 80z jars of kosher dill pickle slices, from our Eureka cukes. The pickling mix said they're supposed to be fridge pickles, but I gave them a good 15 minute water bath anyway.

I have no idea if the jars sealed or not. I never heard a pop, but those lids are not moving, not even to provide a pop-up in the middle.

I also have no idea if this is a good or bad result. We can freeze, if necessary, and we have room in the fridge, too.

Anyway, it's been 2 hours and the jars are still kind of warm . . .
