I have been using a lot of my dried tomatoes this winter. Store bought are not so good or cheap! They are great reconstituted with hot H2o and olive oil. Also add garlic and dried onions. Delicious on salads, pizza and stir frys.:drool

Teresa did the same thing with all of our roma tomatoes last summer. She has a large 9 tray Excalibur Food Dehydrator and she dried enough of fill up 3 of these large 80 oz pickle jars with them. They're great on pizzas and just about anything else. She uses the hot water and olive oil method to rehydrate them too.

I love drying the cherry tomatoes. I just put them right on the pizza- no reconstituting. I also add them to my homemade canned tomato sauce, when I am cooking it. They seems to soak up the watery part, and make a thicker sauce, quicker...
Did you guys remove seeds, or keep them in?

Today I had grandpa's garic fried in olive oil, then my kale, canned chick peas and stewed tomatoes cooked down until the kale was soft/tender. YUM!

I love my dried tomatoes, I'll make more this year! the are great with pesto and finely chopped cooked chicken for sandwiches! as well as with chicken alfredo pasta! Oh, I could go on and on!!!

I have to try more dried tomato recipes.
Last year's tomato harvest was pitiful, but fortunately I preserved the abundant harvest from the previous year and have lots of dried tomatoes. I love getting ideas from everyone.
We haven't made anything special with our garden produce. We don't have much fresh stuff growing at the moment. Our asparagus is just starting to come in.

Was thinking about this thread last night at dinner!! We had lightly steamed snap peas and our first strawberries of the year!! Oh, how I love my garden!

We had a nice salad with romaine, red leaf, green leaf, carrots, & a cuke...all from the garden. :D

Last night we grilled kabobs - I used my peppers and squash from the garden and had my first sliced tomato! They were yummy! Still waiting on my okra. :(

Okay so not *technically* from my garden but I'm making dandelion lavender jelly tonight.... It's soooooo amazing, tastes like flowers and honey. It is a tad bit of work tho...but worth it.
