Mmmmmmm, looks scrumptious! We add some bacon pieces, onions, sweet corn and green peppers to the cornbread mix. We like our cornbread to be a meal as well as an accompaniment. :D

Hot water cornbread?

Hot water cornbread is cornmeal with boiling water poured in it, put a glob in your hands and make patties, fry in hot oil.
Variations;
add a little sugar, or add a little salt
chopped onions
jalapenos

I always make these when I make salmon patties .

I always make these when I make salmon patties .
My Gma would put whole corn in that and called it corn fritters. I don't know if she did the boiling water though.

The boiling water actually cooks the cornmeal. Frying it just puts that crispy outside on it.

Wish I had a piece to put honey or maple syrup on.

Now that is one of the reasons to make cornbread from scratch!! I have been buying the local unfiltered real honey here, when I can locate some. It is expensive, but well worth it.:drool
