Won't you please post that recipe? Pretty please? It sounds DELICIOUS. I've made other Bisquick "quiches" (they call them Impossible Pies), and they are really good. One that uses zucchinis is right up my alley!!

this was the only way my mom could get me to eat zucchini as a kid!
Zucchini Quiche (quick quiche)

3 cups grated Zucchini (or summer squash)
1 cup Bisquick
1/4 cup oil (i've been using olive oil but veggie will work too)
1/2 cup grated Parmesan cheese
1 table spoon salt
sprinkle of garlic powder (i choose to add a little more)
4 eggs beaten
1/2 cup chopped onions (optional)

preheat oven at 350*F

put all ingredients into large bowl and mix together till dry ingredients are moistened. grease a 9x13 baking dish and spread mixture evenly in dish. place in oven for 40 minutes till top is lightly golden and does not jiggle. cut into 3x3" squares and either eat them while still warm/hot or put them in the fridge for a quick snack later!

THANK YOU very much! It looks wonderful . . . and easy, too! Why is it that the BEST recipes are the simple ones? Oh my. I think I'm going to have to make this tonight. Goodness knows, I have plenty of zucchini -- LOL.

enjoy the recipe and have some fun switching some other veggies in with it! i can tell you that this is at least a 30 year old recipe so if you can't guess my age by that :plbb of course i have since grown to love a lot of veggies i hated/feared/loathed as a kid and the summer squash and zukes are just some of them that grow like weeds most years here! and now that i have chickens too it is a really good way to use up both the eggs and the veggies i'm getting!

Are you SURE it calls for a whole TABLESPOON of salt?? That's an awful lot of salt. :sick Just checking....

PS: I have recipes that are a lot older than 30 years! Heck, I've been MARRIED for over 30 years, so you can probably guess MY age :p

i took a double take at that too. you might be right and only a teaspoon. a lot of times i don't really measure the salt just put a dash in. i also realized that i forgot to mention that there should be a table spoon of oregano! so i might have looked at that measurement and switched it up :rolleyes:
