Now that we are empty nesters. I have to scale down on portion sizes.
My husband likes to have dessert after dinner, but only a bite or two.

I am now going to specialize in tiny desserts for him.

Here it is before going in the oven.

I think I put in too much filling. It bubbled up over the crust.

Those are wonderful looking! I could almost taste them. You have skills and patience to do all that. My mother is wonderful pie maker but not me.

Is it the size of small ones you see at bakeries or more the size of little tarts? How many do you get from one pastry recipe?

I like the fact that they're small. I'm trying to watch my carbs so I'm shying away from making an apple pie because it would be too much for just my husband. But maybe I can make these for him?

The pan is 5 inch across, it makes four very small slices. I make the crust from scratch... and I do it by "feel" not by a recipe.

My husband likes very "short" crusts. So lots of butter, a small amt of flour, and some ice water.


A few years ago at Walmart they had small pans for sale, pie tins, cake pans, spring form pans, loaf pans, tube pans, all very tiny for a great price. I haven't seen them lately. I am glad I bought them when I did. I have seen some small pans at Joann's and at some cake decorating places.

I love making the tiny versions of desserts. Though you do have to adjust the recipes.
