Deeply Rooted
This is more of a seasoned juice recipe, not just plain tomato. Kind of like a V8 but with lots more flavor. I tend to like recipes with lots of ingredients to get a good depth of flavor. Let me know what you think!
15 pounds tomatoes
1 cup chopped carrots
1 cup chopped celery
1 cup chopped onion
1 cup chopped green pepper
1 handful of spinach leaves
3 jalapenos, seeded and chopped
1 tablespoon minced garlic
1 tablespoon lemon juice
1 tablespoon lime juice
3 tablespoons worcetershire sauce (or however you spell it)
2 teaspoons celery salt
2 teaspoons onion powder
1 tablespoon salt
1 tablespoon pepper
1 teaspoon seasoned salt
2 tablespoons sugar
1 tablespoon beef bouillion
2 teaspoons chipotle Tabasco sace (or to taste)
Quarter tomatoes and cook with carrots, celery, onion, green pepper, jalapenos, and garlic until tomatoes are very mushy and vegetables are soft. Cool down for atleast two hours or over night. Run through any type of food mill. Bring juice up to a boil and add rest of ingredients. Fill hot jars with juice. Jars should seal as juice cools, otherwise process for 15 minutes in a hot water bath. Any and all ingredients can be altered to your specific taste- i've made many different
variations to this recipe over the years and they all turn out great.
*the chipotle Tobasco sauce is very important to the flavor of this recipe. I find it tastes much better with the chipotle verses the plain or green variety.
