That's a good idea on the cucumbers. It's just too expensive for me to buy or make those when I need 30+ plants of each type! Kind of cute for a backyard thing, or if you're not a serious grower.

I think I am going to try a tomato designed for a hanging basket next year, something that won't grow so long.

Thats what I was thinking. If not you can always grow some herbs like mint??

I used one in my greenhouse to grow tomatoes all winter. Fun to have a home grown tomato in January, but not like garden grown. They dry out very fast. tomatoes grown in the summer in the bags were not as flavorful, no more prolific, maybe less so. But, if space is an issue its an OK alternative. I used it for the fun of trying something new.
