Since this thread has evolved a little into "like and dislike," I feel as tho' I can get my oar in.
It isn't that I dislike fully-mature beets, they are fine. And pickled beets are okay for a taste but I don't eat much of anything pickled in any quantity. I like quite a few pickled veggies but nothing would ever get used up if I was relied on to eat it. I even like vinegar, in all of its various flavors -- just a splash, ma'am. That'll do it!
Baby beets, fresh out of the garden, are an absolute favorite, however. Just the prospect of having baby beets each year is delightful!
So . . . if you don't think you care much for beets, don't let that stop you from getting a packet of seed and trying the entire plant just as the roots reach marble-size or even smaller. Tossed about quickly in hot oil, they are wonderful

And if it's that purple color that doesn't seem quite food-like to you -- Touchstone Golden beets have grown just as well as any other variety that I've grown. Maybe you will appreciate that color at the table. Finally, if a leafy veggie just has to be green, Perpetual Spinach is about as close a relative to a beet as you are going to find. You don't need to eat the root, which doesn't bulb up anyway, but the bright green leaves do real well at staying tender right thru the summer.
Okay, that's a something of a topic drift but the idea that some folks "just don't like beets" set me off a bit
