Yes @Nyboy it is me. A long time ago I learned that Vodka is a good medium for keeping your ginger fresh for lengthy storage. I have a jar in the frige with about 2 inches of Vodka and some ginger root. I usually don't keep the ginger in there for more than a few months because we don't use the ginger for anything but making tea and we replenish it about once every other month. There is absolutely no Vodka taste to the ginger. I wouldn't like it if it did.

I freeze mine whole with skin on it. sometimes I use food saver bags and sometimes just a zip lock bag.....When I need it I just take a chunk out and cut what I want while it is still frozen. Peeling is easy scraping with a backward spoon...

Does the alcohol smell like ginger when you're done? I make my own vanilla extract the same way. If the ginger essence disperses into the vodka, you could use it to bake with just like vanilla. The vodka evaporates when you bake with it.

Thank you for that tip! I would have never thought of it. I have a hard time using it up before it spoils and it doesn't take long to get freezer burn if I just slice it up and stick it in there.
