Thanks everyone! I did make jam, froze several packages and we are eating them as they are harvested. We were gone for 4 days and lots went to waste because of a heavy downpour and wind. The honeybees are eating/using some since their food is scarce at this time. We should still be able to get another gallon or two before they are all gone.
You know what I just started making from my raspberries, banana, figs and left over frozen fruit... FRUIT LEATHER! We're doing sugar free fruit roll ups. SO YUM!
Its easy... through the fruit in the food processor and just beat it to a liquidy pulp (stain if you want the seeds out) then pour on a baking sheet spreading it out evenly. Then bake at 175 degrees for about 2-2.5 hours and you get this sweet chewly leather.
I'm snacking on a batch of fig ones we made tonight.
