Today I made a second batch of my salsa. Not sure I have much to give away so I’m debating making a third batch but I would have to buy some tomatoes and not sure I want to do that.

Today I canned tomatoes. Trying to think, I don't believe I've ever canned tomatoes. It sure takes a butt-load of them to make a batch. I ended up with 3 1/2 qts. I thought I would have more.

for us growing beefsteaks it takes about a 5 gallon bucket to make 7 quarts. varies a bit but that's how it's been roughly for many years for us here. this is putting up tomato chunks with no added water or anything else. i can't remember how many it turns out when we make tomato juice, we've not done that in a few years now.

the other rough guess by weight is that it takes about 3lbs of tomatoes per quart. some gets trimmed away or peeled away, or there's a bit or rot or perhaps even a whole tomato ends up being ditched into the scrap bucket.

we're going to have to pick and put some up in the next few days. so far we're at 71 quarts from 12 plants not counting what we've eaten, so roughly that's 210lbs of tomatoes and we probably have another 4-6 buckets of tomatoes out there yet. we gave away half a bucket today, some onions, beans, chives, garlic.

i think the younger boy may have a bit of a bean collector streak in him. it will be interesting to see if he continues and how it goes... i gave him quite a few varieties to start with. he likes eating beans with rice so that's a good motivating point and he was even talking to me and asking questions. the most i've talked to him ever. :) fun afternoon...

I posted this, BUT, 15 quarts, 2 pints and one 1/2 pint of tomatoes. Gone one week on vacation and big harvest. My corn on the south side of the garage is over 10 ft tall! It's "Indian Corn", BUT, we might try to cook it up anyway this weekend.
Can't believe it BUT, I need more canning jars. :thI only have one package of pints left.

we've had to buy quart jars this year and had a few cases given to us which is appreciated. :) one relative has been giving us plenty of pint jars and Mom decided that since we had so many she got rid of a few cases. !!!!! i told her i'd store them in my closet instead of getting rid of them. i could use them sometime in the future i'm sure... no luck.

Ducks, to bad you don't live close. I have several quart boxes that I know I'll never use. They are regular mouth and I prefer the wide mouth instead.
