Got some free apples at a school about 20 minutes from home. Got a call from my son asking for a ride, so I grabbed a couple of half bushel baskets, and figured I'd check it out. On Facebook, I had an ad out looking for free fruit, and a teacher had replied that he goes every August to clean them up as they attract wasps. I never figured the apples would be this big or nice.
I used honey as a sweetener, and topped it off with about a cup of white sugar. Made 18 pints altogether, and we only used half a bushel, with about 2/3 of a basket left. Going back this week with a ladder and a lot more buckets.

The helpers!

I should show my setup as well, my Dad split the cost of this with me which was $400 Canadian(about $50 US), and I don't regret it one bit after spending 16 hours spinning the handle on a fruit press, pretty sure I could feel the arthritis developing at the time lol.
The amount of pulp left over is really incredible. I run the apples through, and then run the pulp through an additional 4 or 5 times, it gets every bit of apple out, with very little waste.

This is all that's left of a half bushel of apples. I only cut them in quarters to remove the seeds, as last year I did them whole and found the machine was grinding up the seeds and they were in the sauce.
That is an impressive machine. Could you provide a link? I too am looking for a faster way to process larger amounts, without the strain on my (older) bones. It seems I'm not getting younger... :old so got to find easier ways to get things done.

No meat, it’s hot salsa.
Broil tomatoes and jalapeños till blacken. Leave skin on both tomatoes and peppers.

Sauté garlic cloves in a tiny bit of oil till kind of cooked.

Put everything in blender with some chipotle peppers. Add salt.

Then cook on low for about 25 minutes. You can add chopped cilantro when eating.

That's a hard one. There are around 12 jalapenos and maybe 20 tomatoes? I use heirloom tomatoes only, no romas or paste ones.

Mary
Explains a lot. I used 6 better boy tomatoes to about 5 of those huge jalapeños along with 2-3 yellow bananas.

Loved the texture and taste. Although HOT, & I like hot. Loved that it is so easy and fast to make.

OH, SNAP!!! Just posted that I am about to can my first 2019 Romas today!!! Should be 4 quarts+. We always use them for stuffed peppers. If I expect a frost I plan to throw covers on them, harvest and prep by also removing the seeds, take them to my blender and try to can some sauce.

Thank you for sharing. I just canned 3 quarts. Why 3? Turns out that is how many tomatoes worth my grill does on one attempt...

Been so busy canning I haven't had a chance at an update, been up to my ears in tomatoes.
Dad and I harvested what was left of the garden about 3 weeks ago, I only had 3 days to work with, so it was pretty much all out the entire time. At the time, we only got out about 2/3 of the tomatoes, so a neighbour got to pick all she could use, and then my Dad picked the last a week or so ago and got a little over 3 bushels. Must have had close to 10 bushels in the first pick, it became a matter of how many I could haul home in my little golf.

What I got into my car:

The black garbage bag weighed about 130 lbs, I could hardly lift it up into the car.

Carrots, about 3 rows, we got about 120 lbs worth I think.

Potatoes, weighed in around 450 lbs.

The cold room:
Am realizing I'll have to build proper shelves to store everything properly, I don't trust that these plastic units will handle the weight very well.
Will update when I can get my hands on some wood. The cold room is a fairly recent development, I enclosed the end of our cold storage, as it had a vent to the outside, and did stay above the freezing mark all last winter once I learned to block off a good portion of the vent.

Mostly peaches and plums with a bit of the salsa lower right.

20191018-022748.jpg

Applesauce, jams and salsa mostly on the left, but this unit is a lightweight, so don't want to overload it.

20191018-022800.jpg

Busy Jam day:
Plum, Sour cherry/plum mix(This turned out really well) and Blueberry.
