I think traditionally, boxing day was the day the servants and peasants were given the left-overs. The Lords and Ladies had their servants "box things up" and deliver to the other commoners.

That seems to ring a bell but when you get to my age you have to start deleting information in the old noggin to make room for the new. My think box has been at full capacity for some time soooo, somethings have to go. At least that's my story and I'm stickin' to it ;).

For the first time in 12 years I'm not hosting. So all I'm taking is: stuff to make buttermilk biscuits at my sister's house (best right out of the oven), string beans from the canning cabinet, pecan cobbler & ice cream .. and anything else that occurs to me that I want to haul across a couple of counties.

we decided to switch things up, instead of doing a smoked herb crusted prime rib, duchess potatoes, asparagus with a bearnaise sauce, rolls and pie...

this year going to smoke 4 boston butts<need to clean out the freezer> with that said the butts are going to meet the north and south..."" in no words was i talking about you yankees"" was talking about north and south carolina styles of bbq...... the butts will be injected with george's original bbq sauce
200613-600x600-A.jpg

and once injected going to do a wet rub of mustard rub except of using dry mustard going to use french's yellow, a nice coat....
For the rub and Boston butt:

· 2 teaspoons dry mustard

· 2 teaspoons sweet paprika

· 2 teaspoons salt

· 1 teaspoon freshly ground black pepper

· 1 teaspoon ground white pepper

· 1 teaspoon garlic powder

· 1 teaspoon onion powder

1/2 to 1 teaspoon cayenne pepper

once done with that cover in cheese cloth..
smoke at 225* for hours upon hours.
served with mac and cheese, cole slaw, buns and sweet apples and ice cream...

and going to try a hand a making pork tamales the new years ...

whats your menu going to be..?
I live an hour from Boston. Never heard of a Boston butt.

I usually make a collection of favorites including Gawoomki-Polish for stuffed cabbage. Family members bring a dish or 2 of somewhat polish types of food but we will eat anything someone wants to try out on us. I had the most beautiful peppers this year. I have so many I am going to make stuffed peppers instead. Like Gawoomki but with an Italian flair. No matter what I cook we all eat like pigs. Apple pie and pumpkin-from--the-garden pie, my most sought after desserts.

During the presidency of Jimmy Carter, he passed a rule freezing prices because of run-away inflation. Not to be stymied, the meat companies renamed many cuts of meat. A new meat meant it was not covered by price freeze.

Boston butt may have been a name change from rump roast or such. I know that is when New York steak first got its name.

I'm not sure what it's origins are without looking it up but its shopping, shopping and more shopping, for all those big sales. Kind of like a black Friday.

All the big football and rugby leages have matches on Boxing day in England, so I guess it's probably eating leftovers and watching sports.
