I had Winter Squash for lunch.

There are several more on basement shelves, and ..

. frozen pumpkin pie.
So how do you prepare your winter squash? I have a small Sunshine squash in the pantry that will need to be eaten soon, and I could use some inspiration.

Today we had carnitas with fragrant homegrown cilantro. I just love fresh herbs.

@Branching Out , so often the squash is used for pumpkin bread or pumpkin pie, substituted cup for cup in a recipe for the canned pumpkin.

Cooking before adding to the other ingredients may take any form from oven baking, microwave nuking, steaming, or boiling. Served just by the piece is by baking along with a roast something or, simply in the microwave, either with butter and brown sugar.

Soup is an important part of our diet. Sometimes, it's a pumpkin bisque. All choices are very simple :).

I am using up some frozen cherry tomatoes for this amazing feta pasta. It also has homegrown garlic, basil and parsley.
Here is the recipe. I always double it and make it in a 13×9 pan and it lasts few days.

I have read about this dish. When the recipe first came out everyone in Finland was making it, resulting in a nation-wide shortage of feta. Must be good! 😂
Oh my! It's really good! I like to sprinkle a bit of hot pepper flakes on my own plate.

@Phaedra , we still have Winter Squash in the basement. "Curing" them when they first come off the vines have made an important difference in their holding quality and has added weeks if not months.

I'm having my second breakfast early because I've been busy with household chores and the first breakfast didn't have that holding quality to carry me through the hoped-for, 4 hours ;).

Pumpkin bread! Using a squash and made 4 loaves. One is already gone. No, this isn't a sugar rush, these are loaves of yeast bread not the sweet dessert bread that I sometimes bake.

Lots of people are familiar with potato bread. I find that combination okay but nothing special. Substitute squash, call it pumpkin bread so no one thinks it's a flat bread, it puffs up just fine - enjoy!
