According to Wikipedia that's part of it, but a major part was that it was easier to keep a dairy barn clean if the insides were whitewashed. Once a year you blast off the inside and the flaking whitewash comes off, bringing dirt with it. Then you apply a new coat with fresh insecticidal properties.
The article did not mention it, but a barn with a white interior makes it much easier to see things. When you are working in a dairy barn that can be important. I painted the shelves in a purpose-built storage room a light bright orange, partly because it was a return to Lowe's and thus cheap, but I wanted a bright color so I could find things better. My wife was horrified at my choice but it was my storage room in a separate building she never visits. The walls were white.
