My grand daughter and I harvested 68 pounds of potatoes from my leaf/compost piles May 24, Saturday. I boiled potatoes, added butter and rosemary, that night. The next night we had potato soup. Last night we had mashed potatoes to go with roast beef. We also had the first eggplant for the season, split in half, baked, topped with cheese. Yummy!
Tonight I took the leftover mashed potatoes, about a cup full, and put in a mixing bowl. I added 2 small eggs, 1/4 cup chopped onions and 1/3 cup of flour. I mixed it all up with a fork, made small patties and dropped in hot olive oil. I love potato patties and make sure I make enough mashed potatoes to make them the next night.
The potatoes I grew in the leaf pile are so pretty, I had to include a couple in the picture!
