I need to do better with starting them in succession. Having a flood of baby beets is ookaay because i really like them. But, there need not be an overabundance because I'm not really a fan of the roots.
beetroots, just found a white variety ... I already have the orange-yellow one
I like the yellow ones but was a little disappointed in the white because of limited flavor. Tastes Are Subjective, however ;).

Ya know, you just need to get your fingers dyed when you process your beets. The other varieties are just watered down versions of the originals.
SOME SMART GUY discovered a looooooooonnnnnnnggggg time ago that the red beet had a tasty root. Some OTHER smart guy discovered a way to grow cylindrical red beet roots.
Then some SMARTALEK guy decided that the stems had been ignored, then some female decorator decided to grow only those with bright colored stalks.
I think beets have been abused. Just MHO...
