:rolleyes: Some recent health concerns have my diet in such a turmoil, I don't know WHAT my new 'allowed' comfort foods will end up being. Some of yall's options sound GOOD.

To all the newbies, you now understand why I go on my rants about the southerners being evil.....taunting us with pix of their beautiful gardens while we in north are battling winter yet. & they enjoy it as you can read.....

have told you numerous times, not our fault that your parole officer will not let you move to a warmer climate....

yes we all love that photo of you having a big cry because nobody listened to your rants as a child..

stouffer's lasagna and homemade bread is one of those wonderful things on a cold wet evening i look forward coming home too during the winter...
talk about putting a glow on the inside..yum


omg...I lurve Stouffers lasagna!! It is an addiction of mine. Now Spouse, he tells me now...he doesn't like it. After eating it for 7 years
Something good that goes with the lasagna...Stouffer's Spinach souffle....if you can find it.

And just what health concerns???? You know you have to tell us. "allowed" comfort foods doesn't sound like much culinary delight.

Oh! Nothing dramatic. For the past year or so I've been feeling "BLAH!" with a whole variety of complaints that I just chalked up to 'getting old'. Aches and pains, stiffening joints, just not feeling good. I talked with some friends - who all 'knew' exactly what was wrong - LOL. Recently, talked to a nutritionist who suggested that I could be suffering from a couple of diet related things.
SOOOOooooo cutting out a lot of things that were staples in my diet. Replacing some things, trying to learn to do without others.

it is so hard for me to play favorites and my diet is changing
quite a bit the past few years (reaction to tomatoes being the
most challenging, because i've eaten tons of tomatoes over
the years and Italian tomato based dishes/foods are our major
cooking style - and no, it isn't the acid levels or a digestive
problem). one of my old favorites was homemade toast with
tons of butter and a pint of our garden salsa dumped over it
so kinda like a bread pudding. simple and so good...

the obvious one i love are beans. cooked plain in water most
of the time and then we will use them for various dishes. if i'm
trying out a new variety or selection i will make a batch of just
the one type and see how it tastes (so far most of them do
taste different from each other). i also have mixed bean
combinations but most of them are on-the-fly and not
repeated. lima beans are Mom's favorite so once in a while we
have a batch of those made for blonde burritoes and plain
eating (with butter :) ).

this week's theme is german potato salad (using up the last
of the potatoes we grew for the first time in many years)
onions and turkey bacon. i'm quite happy eating this sort
of thing for a week straight. i have a few more quarts of
roasted red peppers to use up so i stir some of those in there.

homemade bread for grilled cheese sandwiches and soups.

i make very good Mexican, Chinese, Thai, Indian or Middle-East
style foods when i get the time and Mom isn't around (she's not
into spicy stuff).
