Thank you Hoodat I never would have even thought about that. I would have just water bathed them.

Excellent point. The whites, yellows, pinks, greens, blacks or even some of the reds can possibly be low acid. That's why I pressure can everything when I can with tomatoes. I just don't know. You may have varieties that you know are high acid, maybe you test the acid level, or maybe you add lemon juice to get the acid level up, but I just don't take any chances.hoodat said:Be advised that all the white tomatos are low acid so you can't water bath can them.
