Thank you Hoodat I never would have even thought about that. I would have just water bathed them.

The low acid makes them better for those with touchy stomachs. Some people who get acid stomach from the red ones can eat the whites with no problem.

Excellent point. The whites, yellows, pinks, greens, blacks or even some of the reds can possibly be low acid. That's why I pressure can everything when I can with tomatoes. I just don't know. You may have varieties that you know are high acid, maybe you test the acid level, or maybe you add lemon juice to get the acid level up, but I just don't take any chances.

I haven't grown any white tomatoes, but I suspect it's like the other colors. They taste different depending on variety. If I thought all yellows tasted like Yellow Pears I'd have never tried the Jubilee and I really like Jubilee. I know some people really like the Yellow Pear but I much prefer the Jubillee. Just different preferences.
