Awesome! I use sweet potatoes in stir fry. I partially cook them first in the skillet, then add the other vegetables. They still have a little firmness to them, but that way the other veggies don't get too mushy while I'm trying to cook the sweet potatoes.

Pork and Sweet Potato Stir Fry

Pork cut in bite size pieces
Sweet potatoes sliced 1/4" or thinner
Bell pepper
Onion
Pecan halves or other nuts

Mc Cormicks Caribbean Jerk Seasoning

Stir fry pork and pecans in a little oil until pork is done. Season with Jerk Seasoning, remove from skillet, set aside.

Cook sweet potatoes, cover skillet to get them done faster. You want them to still have a little firmness. Remove cover, add other vegetables. Season with Jerk Seasoning to taste. When vegetables are just about done, add pork and heat. Serve over rice. You can add soy sauce, or any type sauce you like. Sometimes I make a sauce out of home made preserves.

You can use any kind of vegetables, whatever is ready in the garden. Sometimes I use a small can of pineapple chunks. I haven't tried it, but I bet apple chunks would be good too.

That sounds really yummy! I wouldn't have thought to put them in stir fry. I have a feeling my DH will love this dish.
