GWR spring time is prefect time for chicks.
Prick the skin of the duck so the fat can escape as it cooks. Duck fat is so good to cook with! I used it in stir fry and rolled sweet potato fries in it, then baked them. And the duck skin, crispy, is worth fighting over!![]()
