We've only gone to one wine tasting, it was at one of the wineries here on the island. Venturi Schulze, been awhile since we've been there. Beside their wines which are pretty darn good this is where I buy my balsamic vinegar I use on special occasions.
When there we had a tour of their vineyard. Before we were allowed to proceed we had to walk through a tray of disinfectant or you couldn't go, this is to help keep their vineyard virus free.
The vineyard is planted on a slope and if my memory serves me correctly it was laid out by satellite. Before each vine was planted a deep hole was dug, water in the bottom, filled in and vine planted, making the roots reach down for a drink. That's the last water they get other then rain.
Each row is meticulously keep free of weeds, they compete with the vines for what moisture is available so they are weeded out as soon as they appear, the boss keeps an eye on this.
Their balsamic vinegar is made the old traditional way over a open fire, it is so, so, yummy :drool . I have 3 bottles of their classic one from the year 2000 which is stored away with a don't you dare touch label on it. They were expensive when bought but the price has gone up from when I bought mine, this is why only used on special occasions
