We had some volunteer butternut squash a few years ago. Where they came from, I don't know, but there were maybe 2 dozen of the fruits, and they were excellent. They did run all over the garden, though, and most of that space has now been converted to a modest lawn for the grandkids.

I'll have to do some thinking on where to plant them next...

Butternut and acorn is fab in sooup. I like the following:
1/2 tsp garlic
1/4 cup onion
Throw these in a pot with 2 tbs oil and cook till carmeled. Add:
28 oz chicken (or vegetable broth)
dash of pepper
1/2 tsp cumin
1 lb cubed (bite sized) winter squash, skin and seedfs removed of course
Boil for 5 minutes. Taste and salt as necessary Add:
12 oz apricot necter
simmer another 5 minutes Add:
1/3 cup quinoa
simmer 5 minutes, remove from heat and let rest for 10 minutes and eat!

Acorn is my favorite. I cut them in half, scoop out the seeds, and fill the cavity with a little butter, cinnamon, ginger, and brown sugar, then bake it. When it's done, you squish the meat up into the juice in the middle and serve it in its own little shell-bowl, very yummy!

I tried delicata, it was all right, I think I undercooked it. I planted some more but it died in the summer heat. I haven't had any of the other varieties, but I have butternut growing right now.

What is quinoa? Is that a rice or a grain used for thickening?

I love getting new recipes for squash.:) It looks like I will be eating lots of it this year..:lol:
I like the idea of adding cumin, or curry as was suggested in the soup recipe of Anne's. I bet that adds a twist to it..
