Mr. Ranch y'all need to make some of Bays hot pepper butter. Boy howdy now y'all got you a good garden going down there. I was doing the happy dance up here when I noticed some tomato blooms!
Vacuum packed the dehydrated potatoes (double bagged) & put them away. They should have a shelf life of 15-20 yrs (from what I've read) when done this way.
Started processing the green beans. We started by snapping the ends off & breaking them into bite-sized pieces before blanching for 3 minutes. After blanching. they are dropped into ice water for 3 minutes (to stop the cooking process) & then allowed to drain in a colander before air drying on towels. When somewhat dry, they are transferred to trays for freezing prior to vacuum packing. Here's is the first of many batches:
Thank you for such specific instructions. I needed that but I don't know if I'll have any to freeze. We pretty much eat what we grow and then give some away to a couple friends.
Picked 13 more jalapenos (for tonight's supper) & some of the fresh soybeans (for edamame). I also harvested a few cucumbers & a few tomatoes to give to friends.

Wow, look at all that bounty! Ya'll are in a whole other world than the rest of us. You Texans will be enjoying a siesta in the shade while all the rest of us are toiling in our summer gardens. We just tilled a couple days ago, and I haven't even got started planting!
Harvested more cucumbers, green beans, tomatoes, peppers & eggplant this morning. Mrs. Ranch took them to the gal in town that does our haircuts. While she was gone, I 'pinned' the watermelon vines to the ground to keep the wind from rolling them around.
Harvested more soybeans that I boiled & hulled prior to freezing/vacuum packing. Between yesterday & today, we now have 10 - 8 ounce bags put up!!!
Yes, we stuff them with various cheeses (sometimes with meat too) & then wrap them in bacon. The cooking method is dependant on how I prepare our supper. We love stuffed japs & make them at least once a week.
The top picture were done on the smoker, the middle one were on the grill & the bottom on were done in the oven. They are all good!!!
