Steve this is my smoking curing bible if you can buy it or borrow it from the library it is so worth it ...
we always use our fruit tree prunnings apple ..cherry ...plum...along with alder to smoke our food ..I have a friend who grows a particular apple to smoke his food (honestly between you and I ..I can not taste the diff with his smoke and mine when we both use apple it tastes the same"
because I am in the Pacific NW I adore an apple alder combo with smoking ..then sometimes I go back to my roots and enjoy a maple/apple
or the days of living in the desert south west we used oak and mesquite!
