The flowering tops are from the last of the bok choy, not really a Summer green – they will be back in the Fall from new plants. Clockwise, amaranth, nice and young and tender, from direct sowing and volunteers ;). Top are kale leaves "nice and young and tender," from new starts in 2024.

How do you use the amaranth?

Having amaranth cooked with just a little water and extra virgin OO in a sauce pan. Not on rice and I'm trying to make sure I don't get any on my shirt. Purply Red!

We are having a hard time keeping up with it. The Amaranth volunteered everywhere and some of it was actually where it could stay, other plants were moved. Now, there are young kale leaves and those Tiara cabbage and more than just a few!

Well, that's my quota of exclamation marks so I'd better not say anything about the 🍕 from the deli that goes with the "greens."
