Oh, a few more stats about my week: took 774 photos, saw 54 species of birds, 13 of which I have never seen before in my life!!!! I'll post more pics later :)
I head back to MT tomorrow but have had an AMAZING week!!! The weather has been spectacular, and my Mom and I have been VERY busy. I'm going to be sleeping on the plane for sure!
We biked 23 miles on the paved rails to trails one day, then walked her dogs later that night. Mountain biked one...

I've done a baked dish lately with cubed sweet potatoes, diced up cooked bacon, and feta stirred together. Just dump it in a casserole and bake for a good hour on 375* or so. Its delicious and easy!

I really love dried, candied ginger, and often chop that up to add in cookies or like a crumb topping to a peach pie....yum! I also keep some Gin-Gins around the house, a chewy ginger candy.
