I'm going through this myself with tags not matching what I purchased the end of the season last year clearances , I bought several Lily's & Cheyenne Spirit Echinacea only to find out this year after they bloomed they are NOT the colors that the tag said on each plant :rant :somad

Are you talking about pressure canning?

So it doesn't shock the jar.. from what I understand if you put hot food in a room temp jar it could break the jar.

It so much easier to raw pack because all you do is pack the jars and put in the canner...but if you partially cook it you have to have everything hot..hot jars, hot food & hot water simmering in the canner.

May I ask how it taste like is it sweet like on corn on the cob?
