i have one of the Foxfire books that describes what some people did when they had a pig to process and what they did with the head. i can't imagine what it would be like to have to cut a head in half... i'm pretty glad i don't ever have to deal with that!
It is quite easy to cut the pig head in half leangthwise with a butcher saw. You can also cut / chop it in half with a meat cleaver or even an axe. I make head cheese out of the head, pig feet, and any left over meat on the bones.that's "Some Pig!"
