I Love beans in my soups and salads and of course baked

I dry many varieties of beans and peas. I let them dry on the vine then pull the vines up and let dry further. The bean can't be soft or it will store badly. I simply store in a canning jar with a clean used lid.
I've read of bugs in dried beans but that hasn't been my experience and I am looking at a 4 year old jar of black turtle beans with no insect damage. I throw a bay leaf under the lid before closing; I've read that it helps.

Limas seem to get a mottling of rust which doesn't look appetizing. I haven't had success eliminating it yet. Maybe it's just my cooler wet area.
I love the giant Dr. Martin Limas.

I have bought many open pollinated yellow split peas through Seed Savers but have been so disappointed with the colors-more beige than the warm rich yellow that I prefer. I wish they would be more accurate with the color descriptions of the listings.

Soybeans are very easy to grow but finding a non GMO seed is getting difficult, so I don't bother with them anymore.

I want to grow french green lentils. :D
