Favorite Holiday Cookies / Treats

I have three very favorite treats during the Christmas / New Year's holiday season. They are Russian teacakes (shown in the pic), English toffee, and Fantasy Fudge!

I tried a new holiday recipe this year which will be a forever favorite, Stollen. I didn't add any marzipan, and instead of citron I added 1/3 cup marmalade. We used mostly dried apricots, candied ginger and raisins for dry fruits. I did the gluten free version, still really good. Rising with yeast is a must. Very addictive!

My grandmother used to bake Stollen for us every Christmas and always quiz us after Christmas asking how many slices we ate! It's good with coffee.

we used to make black walnut cookies and then also pecan dipped cookies with a marachino cherry in the middle. i liked both but the 2nd one was more work since you had to fine chop the pecans to roll the cookies in, and then do that rolling and mash them down a bit and put the cherry on top before baking.

for flavor i really liked the black walnut cookies even more and we put some almond frosting on them. i've made the black walnut cookies several times over the years and will probably make some this winter before spring gets here.

Merrie Mallow Fudgies**

15 large marshmallows quartered and frozen*
1 cup shortening
1 cup sugar + extra to roll cookies in
1/2 cup tightly packed brown sugar
1 tsp vanilla
2 eggs
3 cups flour
2/3 cup cocoa
1 tsp baking soda
1 tsp salt

Quarter and freeze the marshmallows at least a day before making cookies.

Cream together shortening and sugars.

Add the vanilla and eggs and beat well.

Sift together the flour, cocoa, baking soda and salt and mix in slowly until thoroughly incorporated into dough.

Shape rounded teaspoonful of dough around each frozen marshmallow quarter, sealing the marshmallow in very well. Roll in granulated sugar. Place on lightly greased or parchment lined cookie sheets.

Bake at 400° F. for 5 - 7 minutes until cookies crack.

Cool 2 minutes before removing from cookie sheets.

* To substitute mini-marshmallows for regular marshmallows, the general guideline is that about 10 mini-marshmallows are equivalent to 1 regular marshmallow.

** May be hazardous to your waistline.

Lucky you! I love that it is so balanced in sweetness, so little sugar in there aside from the dried fruits. This Christmas I really noticed how over sugared everything is so the stollen was a really refreshing change.

dried fruits often have sugar added on top of them already having plenty of sugar. i was surprised by how much sugar was added to dried cranberries and raisins (in raisin bran) when i looked them up.

for years we ate raisin bran cereal and i thought it was good because of the raisins and bran, but, um, nope, i switched to just plain bran flakes instead and so i can add more sugar if i want or if i want some other fruit added i can do that myself. it makes a big difference in calories if you're trying to keep track of them but it can also have some interesting effect upon your blood sugar too by switching.

of course cookies and other treats can be an acceptable form of sugary goodness, but i also like to make those calories really count... yet, no matter what anyone tells you if you break a cookie it does not leak any calories, if you are losing anything it's just in the crumbs that go flying or the energy you expended by breaking it. so, now i will put the breaks on my wordage here... *eeerrrrrRRRRRR*
