those cookies look brilliant I am still looking at my frozen currents I just have not been moved yet! I will be I am sure and those cookies are going to happen!
I heated the currents with some sugar made a light syrup (athough it was very thick I think i am going to end up needing to thin it with water later) and added some Everclear it is now sitting and aging
I tasted it and while it is harsh now I can see how it will be "to die for" in flavor in a few months of mellowing...and this way I can stretch the currant flavor further for desserts and sauces
