What is more 4th of July then potato salad! My friend who grew up in Brazil adds baby shrimp and corn to hers. My mother always added bacon to hers. Anyone have sercet ingredients for their potato salad?

I made some up today for tomorrow's cookout. This is the recipe I used...the best I've tried so far. 406 people concur. ;) It's a rather simple recipe, so I'm not sure just what it is in there that makes it so yummy. I did add a little extra red onion and the tops too. I didn't have the pepperoncinis or black olives, but I think they do sound good.

@journey11 that looks like really good potato salad. I always liked my Father's German potato salad, DH does not. He likes his Mom's. (I swear it is 1/2 potato and 1/2 onion held together with straight mayo!) I do not like it. So.... we never have potato salad here anymore.:(

I make a curry potato salad, which is quite nice, but I can only give the ingredients in estimates, I never measure it off! For 5-6 medium potatoes I use approximately 1 cup mayonnaise. I dilute the mayonnaise with milk, approximately 1 part milk to 5 parts mayonnaise. I then mix in just enough apricot jam to sweeten it up, that's about a tablespoon full, I then add half a teaspoon of curry powder. This then gets microwaved just long enough to bring it to boil, before I pour it over the cooked potato cubes, mix it and let it cool down. It's delicious with chopped boiled egg and chives added to the salad as well.

These are great, unconventional ideas!

Unconventional to me, anyhow ... but, I don't think I ever had a potato salad I didn't enjoy! The spuds even things out and since it is often picnic food, the surroundings and circumstances add to the experience.

Do you all use red potatoes? I had forgotten, but now remember that Mom used red potatoes, boiled with the jackets, then peeled. They apparently hold together better than russets. She also used Miracle Whip, some mustard, onion, dill pickle, boiled eggs, bacon, and sometimes pickle juice if it wasn't tart enough. And paprika. Oh! I should have made some today!
