It just didn't have a lot of flavor. Go to Food Network and check the Neelys sweet potato salad and maybe you can improve on it. I love sweet potatoes too so was all about it
Back in the days when I could digest it, I used to make my potato salad with mostly sour cream or Greek style yogurt, with only a spoonful or two of mayo (originally, there was no mayo at all, but after a few tries I reluctantly decided that potato salad, like tuna salad is one of those things that needs some mayo to taste right) besides that, there was salt pepper and Italian seasoning I think. Maybe some lemon juice.
I always add a gob of Dijon style mustard as well as mayo to mine, hard boiled eggs, celery, onion, maybe cucumber (although that can make it watery if it isn't eaten same day), dill...
Now that I'm diabetic, I don't make it as often since I haven't the willpower to only eat a little. I just ran across an idea for using steamed cauliflower in a similar type of salad though... gonna give it a try.
I accidently made some REALLY good potato salad for the 4th. I boiled the potatoes a little too long and they almost turned to mashed potatoes on me. So I chopped up some more and got them cooking. BEFORE they were really done, I took them out and added them to the 'almost mashed' ones - added a little mayo, some pickle relish & a pack of ranch dressing mix. It turned out PERFECT and the gang at the cookout loved it.
