@so lucky, I use pickle juice in my salad too. DH could eat potato salad every day, but the poor guys wife only makes it occasionally.

I had a recipe which I lost so only remember the gist of it all and sort of make it up as I go, but you boil cubed potatoes until tender, drain them and then flop them on a big baking sheet on which you have poured a lot of pickle juice. Refrigerate a while.
Maybe an hour, more if you get distracted and run outside to do something....where was I?
Oh, add mayo, sour cream, Ranch if you like it, mustard, salt and pepper in a bowl, add cooled potatoes, lots of chopped hard boiled eggs, chives, onion, chopped pickles and anything else that seems right. Mix and refrigerate or get two forks and share with your poor deprived husband immediately.
I did make potato salad for today's picnic. I didn't follow the recipe here exactly because I didn't have everything, but it was a good jumping off point to know general amounts. I love potato salad anyway and I thought it was delish.
So lucky, no, but I would if I could find some here! In Ireland we bought red "rooster potatoes". They were the most delicious potatoes I've ever eaten! I wanted to smuggle one back in my suitcase to try and grow here. Imagine explaining that one to customs...
Had potato salad at BQ last night, it was nasty store bought. I think the potatoes where fake. ( do they make imitation potatoes ? )They where silced very thin like potatoes chips.
I know my wife will add the juice from out candied jalapeños my to give it some extra omph. It doesn't make them hot just another layer of flavor.
She also used red skins & doesn't peel them. She's done it both ways and the opinion around here is to leave the skins on. She's got her way of doing it & it's always a big hit when she makes it.
She recently tried a recipe that was a sweet potato salad for a get together yesterday (I worked the holiday). She was trying to do something different because she knew there was going to be multiple potato salads & didn't want to bring anything home.
Well it was decent at best and she still had a bunch left over. Had sweet potatoes, green onion, red pepper, rest I'm not sure on. It wasn't bad just wasn't anything to get excited about.
