Potato storage failure :( open to ideas

Thistle, I don't know why I never thought of freezing cooked potatoes. Probably because I don't have a need to. Ha!

So, do you just freeze them whole? Then defrost, cut and scoop, and refill and bake?

I don't know why I'm asking. Sounds like a lot of work to me.:idunno

No, to make twice baked you bake, cut and scoop, mash with all the goodies and refill and rebake. You can freeze them after you cut, scoop and refill, then just take from the freezer and bake. It's not really very time consuming. They're handy to have prefilled and frozen for something a little more special than plain old baked potatoes.

I like the dehydrating idea... would you do it in the oven? I have a small dehydrator- but it seems like it would take a million batches to do enough, to make it worthwhile.
So what do you do with a dehydrated potato? Do they retain their flavor and vitamins?

@catjac1975 the hashbrown potatoes I dehydrated retained their flavor. Vitamins? Weeeeelllll I didn't send them out to have them tested, so I can't answer that. I didn't do a lot of them, because it was more of a test to see if we liked them. We do like them and I'll make more this year. I also dehydrated some sliced potatoes and put them in stews and soups. They were good too. And the best thing is they are so easy to store (1/2 gallon Ball jars) and easy to use.

That's a good question Cat. It prompted me to do a little digging, and from what I read it appears that dehydrated vegetables retain a lot of their nutrients. That's when they are dehydrated under low heat and then stored properly.

But if they were stored as chips then reconstituted.....instead of eaten as chips I can see the thought process there.
