Pulled some beets today

These are for supper. The largest is about the size of a baseball. Boil, peel, quarter, salt and pepper, add a bit of lemon zest and a dollop of sour cream. Stir and refrigerate for a few hours to blend the tastes together, then yummy.
I'll pull the rest soon and make my years supply of beet pickles. Love that red color in the jars.

Those look nice. I really like beets. They are sweet yet have real nice flavor. Pretty simple to cook too. Nothing complicated in what you are doing and it sounds really good.

Some of mine are just starting to bulb up. Ill soon pick a few leaves to cook up as greens, being careful to not get too many from any one plant. Ive read that taking too many leaves will keep the bulb size smaller. Makes sense to me.

Last year I canned 15 pints and gave the cooked skins to the chickens. The next morning Id have sworn they were pooping pure blood if I didnt know better.

Yum! I love the pickled beets. I have become "famous" in my family for making them. They are so simple and delish! I always give the skins to my chickens, too- Ridgerunner. I know just what you are talking about. I have even seen the eggshells tinted a slight pink! My beet seeds aren't even up yet! So, they are far in my future....

They are Cosbys Egyptians so the tops are huge. There are more greens there than I need for cooking so my rabbits have been feasting on them. I don't bother freezing or canning greens since there is always some kind of green in my garden. I missed one of the Detroit reds when I pulled them last year and it looks as though it will go to seed. I realized I had never let beets go to save some seed before. I didn't know the roots would get so big. It's the size of a bowling ball and has sprouted a lot of clumps of leaves. I guess each clump will make a seed stalk but only one is budding up right now.. I don't even know what color beet flowers are but I think they'll be white.

I keep trying to like beets. I haven't managed yet. it sounds so good, I think I will try again. when I was a little girl at school, my first grade teacher would make me eat the canned beets. ruined 'em for me.

Store bought canned beets-- :tongue !! Can your own with ACV, honey, whole cloves and a stick of cinnamon. It has been years since I grew beets and canned them.........ya'll are making me plan the fall garden early......

Enjoy your beets - they sound tasty! My beets will be big enuf for baby beets soon, Hoodat. That's the way I like to go!

They will need thinning anyway. I probably let them go just a little longer than optimal so that I can justify bothering with the tiny things in the kitchen. Then, it is all great - I've got baby beets until I can't call them that anymore. Whole plant - just wash off the dirt. More seed is going in the garden within the week so they will be around for awhile.

It isn't as tho' I don't like mature beets, I do. It isn't as tho' I don't like pickled beets, I do. I don't eat much of pickled anything and have never understood people making a "serving" of them, from sauerkraut on. They are like a condiment to me.

Baby beets - they could be one of the 5 essential food groups!

Same here as a kid my mother would have canned beets nasty!! About a year ago I was in a restaurant, my diner had a rosted vegtable that was so good I asked the waitier what it was. Almost fell off my chair when he said beets!!

I find a lot of things that were really nasty at the school cafeteria are really a whole lot different when gathered fresh and cooked right. Asparagus and brussels sprouts immediately come to mind.

Ok...i've had lotsa pickled beets (in PA everyone puts hardboiled eggs in the jar...) but i've never had beets and sour cream. Love both, i may have to try this!!
