Pulled some beets today

Last year I pickled a bunch of beets.

The red vinegar water (I pickle my beets with a little sugar and cinammon) that is left over after eating them can be transformed in to beet salad dressing.

add salt and pepper, minced garlic, balsamic vinegar, minced rosemary and olive oil. I also add some xanthan gum to make it a little thick if you want to. Its really good and you use everything you've invested in!

I just had a look at our beets. I'm figuring on pickling them in a week or two.

I hope it is more like 2 weeks.... I will be busy next weekend and wont be able to help :( But on the other hand making about 300 bucks for 4 days I wont complain.
