Pulled some beets today

I don't really have beets. :hit I bought a six-pack that had tons of seedlings, very carefully separated them, planted, and then we had a heat wave. I missed one day of watering and they became toast.

Have to check if I have any seed and if I can still plant more.

I love beets. There are some in our refrigerated section at the supermarket and I eat those like candy. Already cooked!

I did pull 3 beets the other day (out of the 20 I planted) and I am going to boil them up, beet and then roast with some balsamic vinegar! I've never tried these like this before. I used to gag up the beets my mom made (from canned beets). So I'm being very brave now!

The rest of the beets I have, are just NOT bulbing for me!

I did cut a ton of beet tops from these and I'm going to make a beet top, and goat cheese gratin. Its going to be AWESOME!!!

You might try glazing them. After they are cooked and sliced serving size, simmer some brown sugar, a bit of vinegar (I generally use balsamic) and juice. I usually use apple since I normally have it on hand but orange works great too. Proportions? Whatever makes your little heart go pitter patter. I usually dont measure but maybe 4 parts brown sugar, 1 part vinegar, and 3 parts juice. Depending on how many beets you have, think maybe 2 tablespoons of brown sugar, vinegar and 1-1/2 juice.

After this is simmering, add the beets and stir a bunch. When it is pretty much dissolved and the beets are glazed, youre done. Remember you are evaporating the liquid, not trying to turn it to charcoal. Take your time and simmer.

This is how I normally do them, but Hoodats recipe is looking real tempting. I may surprise my wife next time I fix beets.

Ive heard that if you remove a bunch of the tops they wont bulb up very well. I generally take only one or two leaves from each plant until I pull them.

I had the beet thinnings and orache for dinner tonight :D. (Some of the purple stuff is still stuck between my teeth. See?!)

Started with the diced bacon, finished with a splash of vinegar and a splash of beer. Hey! The beer was handy!

One very purple dish sitting on a bed of briefly white rice ;).

Our first planting of beets are about ready to harvest. Hope to roast a batch this weekend. Like a lot of folks here, I didn't want any part of them growing up. Last year was the first time I grew them and was so surprised how fresh, sweet, and flavorful they were. Roasted or boiled are both good. I only have one quart jar left of the my pickled beets from last fall. Made more room for them this year.:thumbsup

I am officially intrigued by beets because of y'all. next yr there will be some beets in the family of veggies.
