Saving Garlic

I really like those jars that you buy with minced garlic. They last so long in my fridge. I was wondering if anybody here has canned garlic like that, bc I'd like to try it, but I don't have a recipe for it. Thanks!

Hoodat says you can put cloves of garlic in oil and they will last a really long time... Going to try it this year. I am afraid the stuff you buy in a jar has some preservatives in it.

Be careful storing garlic in oil. Garlic is a very low acid veggie which leaves it open to botulism. All the resources I've read say be sure to keep it refrigerated & keep no longer than 3 weeks. I've been running my garlic through the food processor, chopping it finely & then freezing it flat on a pan, breaking it up & storing in a freezer bag. This year I'm going to try drying garlic.

Saving garlic other than freezing or drying scares me.

I grind mine up with the food processoer and put in a jar. I only add a bit of salt to preserve it longer, but I put it in the fridge. I don't actually can it in the jar. I make small amounts at a time so nothing is wasted and I have enough to last MONTHS! :D

Yes i have also heard from very reliable sources that garlic is not safe to can at all.

I don't think hoodat meant to can it... I seem to remember he said just put into a jar with olive oil. Hopefully, he will chime in and tell us his secret.
