Long as you fridge it or freeze it should last a long time, but not like real preserving... don't think you'll be able to hold on to it for a year or 2 or anything like that. I do the dried cherry tomatoes in the fridge in olive oil but what I don't finish over the winter and spring is dumped by the time my new tomatoes start coming in. :/

I bought a jar that showed vinegar as an ingredient.... has anyone tried canning in vinegar?

That looks like a great recipe NwMt! I keep a great deal of garlic in my basement, all winter- but by May it goes bad. I will definitely try this! Thanks for posting that...

This is my first year trying to grow garlic. It seems to be doing quite well. How do you know when it is ready to harvest?

Once you have cut off the scapes- the leaves will begin to brown. When about 3/4 are brown, I harvest.

I dont have any scapes and the tops are growing tall...and seem to be drying a bit...

It is hardneck, I presume? Might be a bit early for scapes, I just cut mine last week. Did you plant in the fall?
