I feel your pain, digitS! Storage is the final piece in the puzzle called gardening! If we can’t store it to last the winter (and into the spring) all our efforts are in vain. Canning, fermenting and freezing are wonderful, but they don’t work for some fruits and veggies. I have yearned for a root cellar, and, at 70, still don’t have one. We get pretty creative though, don’t we? Those big ice chests saved my spuds last year until June!

@Finnie , I used a box that had contained reams of paper to store some cheap potatoes last year that I had bought for Thanksgiving, 2022.
They were sprouting in my basement pantry through August, and I finally got Some in the ground, where they are growing.
You can SEE the confidence that the Irish had in potatoes!
