Loved your blog- getting locked in the coop is a big fear of mine!! Your stuffed peppers look great. I am a vegetarian, but I can use rice, beans, etc. You were smart to cut them in half. I usually try to cut the top off, and they never sit straight! Thanks for the dinner idea!

Awww Thank You and Your Welcome......... They would be great without the meat, I personally dont think you could mess the recipe up, just make it the way you would like it :D

I never thought of using sausage in stuffed peppers. I will have to try that! Thanks for the recipe.

I have been locked in my coop before too. My toddler did it...on purpose maybe!

Hey, Jen--great blog! I also never thought of cutting the peppers in half, but I guess I make stuffed peppers a little differently because my mom used to bake them stuffed and served them with too much grease. yeech!
Now, I make the stuffing on the stove, drain off any grease, cut the tops off, stuff and put them in a deep serving bowl, which keeps them upright, and I microwave 4-5 peppers worth for 10 minutes.

:drool I love to make these! :love my kids get to mix it all together and stuff them, they love to eat what they make. I also like your idea of cutting them in half. it would make sense, sometimes we just make things harder than it should be. :thumbsup thanks for the idea! BTW. I dont use meat either and they still come out awesome. sometimes I do use the boca crumbles though.

im jealous for everything you have put up. I see you have frozen corn on the cob. Ive been wanting to try this for a long time but I dont know anyone who has. What do you have to do before you freeze it and do you have to thaw it before you cook it when you take it out?
