12 cups of watermelon rind, prepared
4 cup cold tap water
3 1/2 T pickling salt
After the picnic gather up all the watermelon rinds. Trim off any of the melon and the outer green rind leaving only the white inner rind. Cut these pieces into one inch squares. Mix up the water and salt and soak these pieces over night. Next day, drain and cover with fresh water and cook for 30 minutes. Drain. Mix up the brine:
1 T whole cloves
1 T whole allspice
Four or five cinnamon sticks
2 cups water
2 cups white vinegar
2 1/2 cups white sugar
Bring the brine to a boil and then add your rind and simmer for about 45 minutes
Remove the cinnamon sticks and pour pickles and syrup into sterile pint jars. Process in boiling water bath canner for 10 minutes.
Give the pickles at least a week or two before eating so they've had time to fully develop their wonderful flavor.

I ask because around here most people make fruit wine with about half grapes or apples then the rest strawberries or blackberries or whatever. Just wondering. Watermelon wine sounds really good.
Hmmm, you dont add sugar until you get to your desired Specific Gravity?jlmann said:That's what I was thinking. Might not be enough sugar in the watermelon. Plus you mentioned that the watermelon juice doesn't keep well so the acidity in the grapes might help. Either way hope it turns out well. The last batch of strawberry wine I made was really good , but I used half white grapes and some honey (for a little extra kick). Definately let us know which one turns out best.
