What are you canning now?

Not canning, but eating from canning. I am making turkey soup/stew, no turkey meat, just cooked down broth (cooked down with onions, carrot scrapings, frozen and old celery). DH insists on soup, although I would like to thicken it up.
We are eating this tonight with one of the pints of applesauce I made a few months ago, AND, since I was low on carrots, I retrieved these two pints of pressured canned (2022) carrots I had downstairs. I gave them the sniff test AND the taste-a-carrot test. BOTH were very tasty! I poured off the canning liquid into the crock pot last night, strained the broth, and added cut up potatoes, onions and celery. (Carrots minus liquid went into the fridge.
I will be adding the 2 pints of carrots about a hour before serving since the canning process already cooked them.
I am about to make corn muffins, too.
I have bones from Thanksgiving and will start the next batch of turkey broth immediately, for canning end of the week.
I may add just a bit of salt, definitely add some pepper.

So, middle DD wanted chicken broth. Eldest DD bought me a 12 pack of drumsticks and I started the broth a few days ago. Plans for next week just changed--I will be doing a full day's worth of loan signings at same location on Monday

, so NO time to prep this weekend, what with today's office party, family Christmas get together tomorrow and other stuff.
SO... with the 6 chicken drumsticks cooking away for a couple of days in my canning crock pot, along with Lots of herbs seasonings, I was up at 1:15AM and decided to stay up and finish the broth, which was done by 3:15AM.
This morning I had to wash the jars--there was a little spillage before I put them in the canner--but they will be ready to pack up and bring for a Christmas present tomorrow!
8 pints, 6 for middle DD and 2 for Eldest DD, and 6 more drumsticks in the freezer for another batch soon!

Made a roast for New year's day and realized that I was low on beef broth, so I added steak bones (w/some meat attached) and a previous roast bones, threw back some small potatoes and carrots from this week's roast, left the onions, added one dehydrated garlic piece, since DD discovered how strong they are, and cooked them for a few days. Got up early this morning and decided that I had smelled eNOUGH beef broth, so I pressure canned this morning, now awaiting the canner to cool. I had to add some water to 3 jars, so I noted Where they were in the canner, so I can amend the labeling. ALL looks very rich! Just heard some lid popping!! :woot:woot
