I think when jars fail to seal from my own personal experience is when the jar doesn't have enough head space..so when there isn't enough head space food gets pushed out and gets on the seal which would make it a fail ...OR when the rim of the jar hasn't been cleaned of all residue this will also cause a jar not seal.

I do can up something we call slumgullion, which is just all the veggies from the garden stewed down together and canned in a jar. That's usually thickened with cornmeal later on and lavished on potatoes, pasta, rice or biscuits.

Slumgullion! I totally forgot about this. My mother made it all the time!
