Anyone have a recipe for Zuccini bread ?

Gotta do something freezable with the 847,236 zukes i'll git from 3 plants :lol:

This is the best zucchini bread I ever ate. Got the recipe from an old farm lady I used to work with.

Zucchini Bread

1 t salt 3 eggs, beat
1/2 t baking pwdr 3 c flour
1 t soda 2 c sugar
1 t cinnamon 1 cup veg oil
2 t vanilla 2 cup grated squash


Mix all dry ingredients first, then add your wet ingredients and squash. I "grate" my squash in a food processor, works great and YUMMY. Can also add nuts if you choose, walnuts or pecans. As you can tell this isnt a very healthy bread but GOOD.

I'm not sure if this will be the same with zuchinni, or not; maybe if they are on the small side....?

My grandmother used to make potato pancakes which were the best!

She grated 1 patty pan squash per every 4 potatoes, that was her secret.

Then make as usual. :)

:D :D :D CHOCOLATE ZUCCHINI CAKE :D :D :D

In a large bowl, cream together:
cup softened butter
cup oil
1 1/3 cup sugar

Then add:
2 eggs
1 tsp vanilla
cup buttermilk
2 cups unsifted flour
4 Tbsp cocoa
tsp baking powder
1 tsp baking soda
tsp cinnamon
tsp cloves

Add:
2 cups grated raw zucchini

Pour into a greased 9 x 12 pan, or into muffin tins.
Sprinkle with:
cup chocolate chips I usually use more, a couple of handfuls

Bake at 350 F for 40 to 45 minutes.

Best served at least one day after baking. Freezes well.

Just read through my Cooking Light magazine last night from last month and they had a recipe for a zucchini /pineapple quick bread. Looked yummy. I don't have th recipe with me, but you can find it on their website, which is connected to allrecipes.com.
