oh suey that was good stuff.....
fire roasted the peppers

let them sweat for 30mins peeled the skins off and then stuffed them with monterrey jack..

made the egg white and york meringue folded it together and dripped the peppers

once fried added a little hot sausage and homemade salsa then placed in the oven till the rice and beans were done...

oh suey suey pig pig pig................ not bad for a quick meal
@ninnymary it might not 100% authentic but .............not bad for a west coast north carolina transplant on a budget......

Well, if it's quick, then I'll definitely have to try making some. :D I was afraid it would be tedious.

on top of the tomato seeds will send you some highlander seeds as well.....perfect amount of heat, excellent flavor once red... puts a poblano pepper to shame.... ......
what time do you want me up next year to make them for your family?

Well thanks, Major, I'll sure look forward to growing those. We eat a lot of peppers around here.

I can trade you some tomatoes, snap beans or something for them. I look for something cool that I think you might like.

Major, I forgive you for not making them authentic. You were way off of how my grandmother made them. :D But your's were quick, easy, and delicious. Way to go.

seedcorn, she passed away many years ago and don't remember exactly how she made them. . She always used poblanos which she roasted and stuffed with monterey cheese. Then she dipped them in an egg batter and fried them. There was a tomato sauce that I don't remember how she made that she would put on top. Finish them off with mexican cheese. She was from Mexico and didn't cook that many different dishes.

I hear you. I so much wish I talked to my relatives for some of my g'ma's recipes. She used to make a pie to DIE for. Cousins say it was a blueberry pie but NOTHING like I've had since. More meaty and not juicy. Still eat fried okra in honor of her and I LOVE IT! :)

Sounds like a delicious meal. I love Mexican cooking. A neighbor lady showed me how to make flour tortillas 30 years ago. About 10 years ago, a hurricane struck, our house was full of people taking shelter, no electricity, stores closed. I started making tortillas in the back yard over a fire. Our friends were snatching them up, rolling up roast beef in them and inhaling them. Tortillas never tasted so good.
